Rice Cooker - Moroccan Quinoa & Kidney Bean Bowl (Vegan)

About the Recipe

Ingredients

1 Yes! rice cooker Moroccan flavour pack

2 cups quinoa (rinsed)

1 can (400 g) kidney beans (drained)

2tbsp olive oil

2 cups frozen mixed veg

3½ cups water


optional: fresh coriander, parsley or mint (chopped), lemon wedges

Preparation

  1. Add all ingredients to the rice cooker.

  2. Sprinkle over the Yes! rice cooker Moroccan flavour pack.

  3. Stir well.

  4. Close the lid and turn on the white rice setting (or the quinoa setting if you cooker has this)

  5. When finished, fluff with a fork.

  6. Serve hot and finish with chopped fresh herbs and a squeeze of lemon if desired.


To make this a real Moroccan feast, serve with roasted pumpkin or kumara, and frwesh tomato wedges.


⚠️ Rice Cooker Tips:


• Our recipes are tested in a standard 1.8 L rice cooker.

• Smaller or older cookers may run hotter – add a splash more water if needed.

• If your cooker tends to stick, give it a gentle stir halfway through cooking.

• Always check that food is cooked through before serving.
