About the Recipe

Ingredients
500g diced chicken or tofu
1 can coconut milk or coconut cream
2 tbsp peanut butter
1 onion, sliced
2 cups mixed frozen vegetables (or if you have a little more time, sliced courgettes, pumpkin and fresh carrots)
1 tbsp fish sauce or soy sauce
1 cup water
Optional: fresh Thai basil, other fresh herbs and lime
Preparation
Whisk together peanut butter and coconut milk.
Add chicken or tofu, onion, vegetables, coconut milk & peanut butter mix, sauce, water, and flavour pack into slow cooker.
Stir to combine.
Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
Serve with fresh Thai basil, or any herb you fancy! To really give it some, squeeze on some lime juice!
Chefs tip: Stir in fresh spinach or bok choy at the end for extra greens.
