About the Recipe

Ingredients

  • 500g diced chicken or tofu

  • 1 Yes! Thai slow cooker flavour pack

  • 1 can coconut milk or coconut cream

  • 2 tbsp peanut butter

  • 1 onion, sliced

  • 2 cups mixed frozen vegetables (or if you have a little more time, sliced courgettes, pumpkin and fresh carrots)

  • 1 tbsp fish sauce or soy sauce

  • 1 cup water

  • Optional: fresh Thai basil, other fresh herbs and lime

Preparation

  1. Whisk together peanut butter and coconut milk.

  2. Add chicken or tofu, onion, vegetables, coconut milk & peanut butter mix, sauce, water, and flavour pack into slow cooker.

  3. Stir to combine.

  4. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.

  5. Serve with fresh Thai basil, or any herb you fancy! To really give it some, squeeze on some lime juice!


Chefs tip: Stir in fresh spinach or bok choy at the end for extra greens.
