About the Recipe

Ingredients
1 Yes! Thai slow cooker pack
1 can chickpeas (400g)
1 can coconut milk (400ml)
1 can chopped tomatoes (400g)
1 kumara, diced
1 zucchini, sliced
1 capsicum, chopped
1 cup frozen peas
Fresh coriander + lime (to serve)
Preparation
Add veg, chickpeas, tomatoes & coconut milk to slow cooker.
Stir in Thai pack (+ soy if using).
Cook LOW 6–8 hrs / HIGH 3–4 hrs. (Pressure: 30 mins).
Add peas in last 10 mins.
Serve with rice or sourdough, topped with coriander & lime.
