Ingredients

  • 1 Yes! Thai slow cooker pack

  • 1 can chickpeas (400g)

  • 1 can coconut milk (400ml)

  • 1 can chopped tomatoes (400g)

  • 1 kumara, diced

  • 1 zucchini, sliced

  • 1 capsicum, chopped

  • 1 cup frozen peas

  • Fresh coriander + lime (to serve)

Preparation

  • Add veg, chickpeas, tomatoes & coconut milk to slow cooker.

  • Stir in Thai pack (+ soy if using).

  • Cook LOW 6–8 hrs / HIGH 3–4 hrs. (Pressure: 30 mins).

  • Add peas in last 10 mins.

  • Serve with rice or sourdough, topped with coriander & lime.
